Ingredients
3 lbs. Pork Loin braised until tender
(Braising Liquid) Beer & Dry White Wine mixture
2 Tbs. Chipotle Mesquite BBQ Spice
1 Tbs. Dark Chile Powder
2 Medium Red Onions, Diced
6 Cloves Garlic, Minced
1 28 oz. Can Whole Tomatoes, crushed
1 lb. Dried White Beans, cooked
1 oz. Mexican Chocolate
3 Tbs. Vegetable oil
1 ½ tsp. Coriander seeds, toasted and ground
2 Tbs. Salt
2 Tbs. Mexican Oregano
1 Tbs. Cumin
Method
- Heat the oil in a large sauce pan.
- Sauté the onions and garlic until the onions become translucent.
- Add braised pork and brown, add the remaining ingredients and allow to simmer for about 30 minutes.
- Adjust the seasoning. Serve with your favorite bread, we recommend cornbread.
