Pulled Pork Tacos

INGREDIENTS:

2# Pork Butt or Pork loin
2 Bottles Dark Beer
1 Small Yellow Onion; chopped
6 Cloves of Garlic; smashed
2 Tbs. Chile Powder
3 Tbs. Steak Seasoning
¼ Cup Chicken Stock
3 Tbs. Mexican Oregano

12 Corn Tortillas; warmed
1 Lime: cut into small wedges
2 Tbs. Cilantro; chopped
2 Avocadoes; sliced
1 Small Red Onion; diced
2 Roma Tomatoes; seeded and diced
Salt and Pepper to taste

METHOD:

  1. For the pork, combine the first set of ingredients together and place into a deep roasting or braising dish. Cover the dish with a lid or foil and place into a preheated 350º F. oven and cook for about 3-4 hours. Remove from the oven and allow to cool slightly.
  2. To serve, heat the tortillas carefully in the microwave with a container of water in the microwave for about 30-50 seconds. Garnish the pork with your favorite toppings. The pork should just pull away in shreds.
