Grilled Pork Loin with Apricot Glaze

INGREDIENTS:

1 ¾-2 ¾ Pound Pork Loin
1 Tbs. Olive oil
1 Tbs. Fennel seed; toasted and ground
1 Tbs. Fresh Garlic; minced
2 tsp. kosher salt
2 tsp. Fresh ground Pepper

1-Cup Honey
¼ Cup Light Brown Sugar
1 Cup Apricot Preserves
2 Tbs. Cider Vinegar
Salt and Pepper to taste

 

Method:

  1. Clean the pork loin of any fat or silverskin.
  2. Rub the olive oil over the entire surface of the pork loin.
  3. Combine the fennel, garlic, salt and pepper together and rub over the pork. Allow the pork loin to rest for 30 minutes prior to grilling.
  4. Grill the loin over medium-high heat 3-4 minutes per side or until the internal temperature reaches 145-150 degrees F. Allow to rest for about 5 minutes.
  5. Next combine the honey, apricot preserves, vinegar, sugar and the seasonings and mix well. Brush a small amount on the pork after it’s cut and ready to serve.
