INGREDIENTS:
1 ¾-2 ¾ Pound Pork Loin
1 Tbs. Olive oil
1 Tbs. Fennel seed; toasted and ground
1 Tbs. Fresh Garlic; minced
2 tsp. kosher salt
2 tsp. Fresh ground Pepper

1-Cup Honey
¼ Cup Light Brown Sugar
1 Cup Apricot Preserves
2 Tbs. Cider Vinegar
Salt and Pepper to taste

Method:
- Clean the pork loin of any fat or silverskin.
- Rub the olive oil over the entire surface of the pork loin.
- Combine the fennel, garlic, salt and pepper together and rub over the pork. Allow the pork loin to rest for 30 minutes prior to grilling.
- Grill the loin over medium-high heat 3-4 minutes per side or until the internal temperature reaches 145-150 degrees F. Allow to rest for about 5 minutes.
- Next combine the honey, apricot preserves, vinegar, sugar and the seasonings and mix well. Brush a small amount on the pork after it’s cut and ready to serve.
