Roasted White Fish with Roma
Tomato, Garlic and Fresh Herb Relish

INGREDIENTS:

4-6 Each 6 oz. Cuts of White fish Fillet
2 Tbs. Olive oil
Salt and Pepper to taste
6 Each Roma Tomatoes; diced
2 Cloves of Garlic; minced
2 tsp. Fresh Tarragon; chopped
1 tsp. Fresh Dill; chopped
2 tsp. Fresh Basil; chopped
3 Tbs. Extra-Virgin Olive oil
Salt and Pepper to taste
Juice of One Lemon and zest

 

DIRECTIONS:

Brush the fish with the 2 Tbs. of Olive oil and season with salt and pepper. Place the fish on a silpat lined sheet tray and place into a preheated 425º oven for 5 minutes per inch of thickness.

Combine the remaining ingredients together in a non reactive stainless steel bowl and allow to rest for about 10 minutes. Serve over the fish when the fish is done.
