Mission Fig and Caramelized Onion Marmalade

INGREDIENTS:

6 Each Yellow Onions; julienne
4 Tbs. Grapeseed Oil
3 Cups of Cooking Sherry
3 Cups of Sugar
6 Each Black Mission Figs; rough chopped
2-4 Bay Leaves
20 Each Cracked Black Peppercorns

 

DIRECTIONS:

  1. Using a medium saucepan heat the oil and start to caramelize the onions by cooking them on medium-high heat for about 3 minutes, stirring the entire time, then dropping the heat down to medium and continue cooking until the onions are browned and have a sweet aroma.
  2. Once the onions are done add the bay leaves, figs, peppercorns and sugar and stir well to combine. Continue to cook for another 3 minutes then add the sherry and simmer until the liquid is almost gone. Season to taste and serve warm.
