Roasted Vegetables

Ingredients:

2 Each Yellow Squash; halved and cut into large bite sized pieces
2 Each Zucchini; halved and cut into large bite sized pieces
2 Each Red Peppers; seeded, cored and cut into diamonds
1 Each Small Red Onion; julienne
2 Cloves of Garlic; chopped
1 Head of Broccoflower; cored and cut into bite sized pieces
¼ Cup of Olive oil
Salt and Pepper to taste

METHOD:

  1. Combine all the ingredients together in a roasting pan and allow to rest for about 10 minutes.
  2. Preheat the oven to 450 degrees F. and place the vegetables in the oven and cook for about 15 minutes or until browned on top.
  3. Remove from the oven and allow to cool slightly. Serve with your favorite entré
