Hot spiced Cider

Ingredients :

10 whole cloves
4 (3-inch) cinnamon sticks
4 pieces crystallized ginger, chopped
1/2 teaspoons fresh grated nutmeg
1 gallon apple cider
4 cups pineapple juice
2 cups orange juice
1/4 cup fresh lemon juice
1/3 cup sugar
1/4 teaspoon salt
Optional: Spiced or white rum

METHOD:

Place the first four ingredients in a spice bag or wrap in cheesecloth. Gather edges of cheesecloth together, tie securely.

Combine bag, cider and next five ingredients in a large stockpot. Bring to a boil. Reduce heat and simmer 20 minutes. Discard the bag.

Serve warm, with or without rum. This warm drink welcomes visitors to your home with pleasing aromas and delightful taste. Can be served in a large punch bowl if primed. I make up an extra spice bag and keep plenty of cider mixture around throughout the holiday season. Serve as a hot toddy warmed with spiced rum by the fireplace aft er the little ones have gone to bed.
