Brie and Raspberry Bundles

Ingredients :

1 jar raspberry preserves or filling
1 4 oz. Brie wheel cubed, 1/4 inch square
2 packages Athens phylo dough cups
1 8 oz. package fresh raspberries

METHOD:

Place cups on a cookie sheet.
Put a small dollop of preserves or filling in the center of each cup. Place a Brie cube and one raspberry side-by-side in the cup.

Bake at 400 degrees for 7 minutes or until Brie melts. Place another raspberry on top if there is room.

Tip: Athens phylo cups can be hard to find unless it is the holiday season. They are usually in the freezer section next to puff pastry and frozen piecrusts.

If you are unable to find them, you will need to make your own from frozen phylo dough. This can take some time, so make them well in advance and refreeze in a solid-sided container.
